Bellinis are super tasty but not the easiest to make if you’re making the peach puree from scratch. Look, is the puree best when you make it yourself with fresh peaches? Yes. But if you have a time crunch, use peach juice, the thick kind, or grab a pouch of Bellini mix.
Peach Bellini
Bellinis are a classic Italian cocktail made with Prosecco and peach puree. Bellinis are great for brunch or a bridal shower. Booze it up a bit with some peach schnapps! This is a great hangover cocktail as well. Making the peach puree doesn't have to be difficult. Frozen peaches work just great. Bellinis are best made in batches. This is for 8 servings.
- 1 lb Frozen Peaches ((Thawed))
- 1 tsp Sugar
- 1 bottle Prosecco
Blend peaches and sugar in a blender.
Fill the bottom quarter of a flute glass with the peach puree.
Splash peach schnapps (Optional)
Top with Prosecco.
Stir lightly.
Garnish with peach slice (Optional)
